Although it can sometimes be tricky to find healthy, weight-loss-friendly soup recipes that are indulgent and feel like a treat, a weight loss influencer is proving it’s not impossible. Samantha Milton, a viral weight loss content creator who lost over 260 pounds recently, shared her recipe for a creamy, low-calorie chicken and gnocchi soup that looks perfect for the winter. Samantha Milton Preps Her Chicken & Gnocchi Soup
This soup combines all sorts of savory elements, like pasta, cheese, and more, but without all of the excess calories and fat. Although many chicken and gnocchi soups served at restaurants are often high in calories and can easily throw people off their weight loss journeys, Samantha’s version is packed with protein, fiber, and various vegetables that make it a great nutrient-dense soup option.

To start her soup, she takes two packages of the viral Trader Joe’s cauliflower gnocchi, lays them out on a baking sheet, and places them in the oven until they’re cooked and heated through. While they cook, she chops some baby carrots into bite-sized pieces and dices a yellow onion.
She then adds two pounds or two packages of lean ground chicken into a soup pot and begins cooking it and seasoning it with salt, fennel seeds, garlic powder, oregano, Italian seasoning, paprika, and pepper. In a separate pan on the stove, she sautes her carrots and onion until everything is cooked through and tender, then adds them to her soup pot with the chicken.
Samantha Adds The Final Touches To Her Chicken & Gnocchi Soup
Once her ground chicken is cooked through and combined with her vegetables, the content creator adds 16 ounces of low-fat cottage cheese to make her soup extra creamy and indulgent. She warns any viewers who don’t like cottage cheese not to fret, as all the curds are going to “melt down.”

As soon as her cheese is melted into the chicken and veggies, Samantha adds 32 ounces of chicken bone broth and two cups of milk. She uses ultrafiltered FairLife milk, but your low-fat milk of choice would work. To thicken her soup, she adds a homemade cornstarch slurry, which consists of a tablespoon of cornstarch and three tablespoons of milk stirred together.
After adding all of her liquid ingredients, Samantha takes her cauliflower gnocchi, which should be lightly browned, out of the oven and puts it in her pot along with a large handful of fresh baby spinach. She lets everything cook together until the spinach wilts and she’s left with a cohesive, flavorful soup. For each serving, she adds a sprinkle of grated Parmesan cheese, and that’s it!
