According to Kanikka Malhotra, a certified diabetes educator and consultant dietician, regular consumption of curd, especially after lunch can significantly alter gut microbiota composition. In a recent interview, celebrity nutritionist Rujuta Diwekar also spoke about the importance of consuming curd and knowing how to set curd and how that can give one a real big insight into their partner’s soft skills.
She said that, “The dating advice I give girls is that, ‘Get married in a house where the guy knows how to set curd. We have progressed enough to know how to do everything else in life. The guy should know how much to heat the milk to be able to set the curd, or else the milk will curdle and go bad. And if it’s not hot enough, the curd will not set.”
According to experts, a well-set curd is healthier than the one that isn’t. Curd is actually processed and made through the fermentation of lactic acid bacteria. If there is proper fermentation, these bacteria produce lactic acid, which then coagulates the milk proteins and forms a gel-like texture. A well-set curd is more likely to consist of viable probiotic cultures and these are super essential for gut health. This was explained by Kanikka Malhotra. In contrast to this entire process, a poorly fermented curd or one that forms a runny texture might lack a sufficient live bacterial count due to some sort of contamination or inappropriate incubation conditions and thus might not do as good to your digestive system.
