3 back-to-school lunches that support kids' gut health

As Utah families gear up for a new school year, it’s time to give lunchboxes a gut-friendly glow-up. Local holistic nutritionist Emilie Davis, MScN, joined Fresh Living to share her top tips for packing lunches that support kids’ digestion, mood, and focus—without the sugar crashes or ultra-processed snacks.

“Most of the parents I work with are overwhelmed,” Emilie says.

They want to feed their kids better, but between picky eating, busy mornings, and confusing food labels, it’s hard to know where to start.

Her advice? Keep it simple, and focus on ingredients that naturally support the gut.

Some of her favorite lunchbox swaps include:

  • Turkey & Kraut Roll-ups – a fun twist on a sandwich that adds probiotic-rich fermented veggies
  • Veggie Muffins – kid-friendly, soft-baked muffins packed with zucchini or carrots
  • Probiotic Fruit Dip – a blend of plain yogurt, raw honey, and cinnamon for a sweet but nourishing treat

These ideas not only support gut health, but also promote steady energy, stronger immunity, and better classroom focus.

“Even small changes—like swapping a sugary snack for a hard-boiled egg—can make a big impact,” Emilie says.
