Congee is a rice porridge that keeps you hydrated. It is easy to digest and light on the stomach. It is also a low-fat diet. Tap to read the healthy South Indian rice congee recipe to boost gut health.
Ingredients
One-fourth cup of washed rice, one tablespoon of ghee, five cups of water, one tablespoon of cumin seeds, one bay leaf, two tablespoons of black pepper, and one inch of sliced garlic.
Saute spices
Take a pressure cooker and heat ghee in it. Add cumin seeds, bay leaf, black pepper, and garlic. Cook it until it starts to crackle.
Add rice and water
Now, add washed rice with water into the pressure cooker. Cook the rice for five whistles until water is absorbed.
Simmer congee
Open the lid and let it cook for another 5-7 minutes on a low flame. Stir it well to avoid burning.
Add spices
While it is almost cooked, add salt and pepper to taste. Serve it hot with mango pickle on the side for a tangy taste.
