According to the NHS, one way to reduce your cholesterol is to cut down on fatty food, especially food that contains a type of fat called saturated fat. You can still have foods that contain a healthier type of fat called unsaturated fat and should try to eat foods including nuts and seeds, fruits and vegetables and wholegrains.

Oats can help lower cholesterol due to their high content of soluble fibre, particularly beta-glucan, which binds to cholesterol and helps the body remove it. This week I made a cake using oats and it was perfect for breakfast.

The Cakeontherun recipe requires no flour, eggs, butter or sugar, yet it tastes wonderfully fluffy. The healthier alternative is naturally sweetened by raspberries and rises with a touch of baking powder. Flavoured with almonds, it reminded me of a delicious croissant.

I baked it in my air fryer in less than 10 minutes, but it can also be cooked in the oven in around 20 minutes if you’ve not got an air fryer. The recipe generously serves ones, so I ate half of it for breakfast with extra Greek yoghurt and berries, and the other half for pudding after dinner.

Raspberry croissant baked oats recipe

Serves 1

Ingredients

  • 60g (2/3 cup) oats
  • 2 heaped tbsp Greek yoghurt
  • 2 handfuls raspberries
  • 2 tbsp sliced almonds
  • 1/2 tsp baking powder
  • 1 tsp almond extract
  • Big squeeze lemon juice

Method

  1. Pre-heat oven or air fryer to 200C/ 400F/ gas mark 6.
  2. Put everything into an ovenproof dish and stir to combine. Save 1 tbsp almonds to scatter on top later.
  3. Bake in the oven for around 20 minutes or air fry for nine minutes on air fry mode.
  4. Two minutes before the end of the cooking time, scatter the remaining almonds on top.
  5. Serve on its own or with additional yoghurt. It can be eaten straight away or the following day cold or warmed up.
